SHRIMP PINEAPPLE BOATS

Ingredients

2 small pineapples
15 medium size shrimp, deveined and cooked
2 cups cooked fried rice
3 Tbsp. Chipotle Aioli Sweet Heat Sauce
2 green onions, sliced

Instructions

Slice pineapple in half, leaving the stem intact. Slice the fruit around the perimeters, angling your knife towards the middle, then make a few cuts across. Scoop chunks out with a spoon and reserve about 2 tablespoon of pineapple juice. Chop pineapple into small chunks. In a bowl combine rice, pineapple juice, Chipotle Aioli Sweet Heat Sauce, shrimp and half of the pineapple. Mix well and fill the pineapple boats. Garnish with green onions.
