SMOKY-SWEET BEEF IN WINE SAUCE

Ingredients

4 slices bacon, chopped
2 ½ lbs. beef blade roast, cut into 1 ½" cubes
3 Tbsp. all purpose flour
4 Tbsp. Smoky-Sweet Barbeque Rub & Seasoning (Retired)
2 Tbsp. extra virgin olive oil
1 ½ cups low sodium chicken broth
½ cup dry red wine
¼ cup fresh parsley, chopped

Instructions

Preheat oven to 325˚F. In a large pot cook the bacon until the fat is rendered and the bacon is crisp. Remove the bacon and set aside. Mix flour and Smoky-Sweet Barbeque Rub & Seasoning (Retired) in a large zipper seal plastic bag, add beef roast and toss until coated. Heat olive oil in a deep oven-safe skillet over medium-high heat, add beef and cook in 2-3 batches, until lightly browned, about 4 minutes each batch. Return all meat to the skillet; add the chicken broth and the red wine. Bring to a simmer, remove from the heat, cover and place in the oven. Braise for 1 hour. Remove the cover and cook, uncovered until the sauce begins to thicken, about 45 minutes. Check to see if the meat is tender, if not, replace cover, and cook for an additional 15-30 minutes. To serve, transfer to a serving bowl, add the bacon and chopped parsley
