CHERRY ALMOND SHORTCAKE

Ingredients

1 box Cherry Almond Scone Mix 1 cup whipping cream Flour (for dusting the countertop) 4 cups fresh pitted cherries (or use 1 can cherry pie filling) ¼ cup sugar 2 cups sweetened whipped cream (make your own: whip 2 cups whipping cream with 4 Tbsp. sugar and 1 tsp. vanilla)

Instructions

Preheat oven to 400°F. Combine Cherry Almond Scone Mix in a mixing bowl with whipping cream. Blend until stiff dough is formed. (You can use your hands to blend together.) Place dough on floured surface and press out, using your hands, to a 10" circle; approximately ½" thick. Cut into 8 even wedges. Place wedges on a greased cookie sheet and bake for15-18 minutes. If using fresh cherries, stir fresh cherries with 1/4 cup granulated sugar in a large bowl. Cover and set in the refrigerator until ready to use. Cut baked scones in half and layer with cherries and whipped cream.
