CORN BREAD WITH ORANGE GLAZE

Ingredients

1 box Traditional Sweet Corn Bread & Muffin Mix
3/4 cup milk
3 eggs
1 Tbsp. fresh orange juice
1/2 cup oil

Orange Glaze
1 cup granulated sugar
1-2 fresh oranges to make 1/3 cup fresh orange juice
1 Tbsp. orange zest

Instructions

Preheat oven to 325°F. While oven is preheating, grease an 8" or 9" round pan. In a large bowl, combine corn bread mix, milk, eggs, orange juice and oil; mix until well blended (about 1 minute). Pour batter into greased baking pan. Bake 28-32 minutes or until edges are golden. Remove from oven. While the cake is still warm, remove from the pan to a cooling rack.

Orange Glaze

In a small bowl, combine orange juice, zest, and sugar; mix well (the sugar won’t dissolve completely). Use a skewer to poke holes all over the surface of the cake. Place parchment paper under the rack to catch drips, then pour glaze onto the cake. Leave cake to cool completely and glaze to set. Once set, the juice in the glaze will soak into the cake, and the sugar will create a crispy coating. Serve as is or with a dollop of whipped cream.
