PINEAPPLE MANDARIN SALAD

Ingredients

1 can (398 mL) pineapple chunks
1 Tbsp. Pineapple Jalapeno Jelly
2 eggs
2 Tbsp. cornstarch
½ cup sugar
2 Tbsp. white vinegar
1 brick (250 g) cream cheese
1 container Cool Whip
8 green grapes cut in half
1 can (284 mL) mandarin oranges, drained
½ bag mini marshmallows
½ cup coconut (optional)

Instructions

Drain pineapple and put juice into a saucepan. Add Pineapple Jalapeno Jelly, eggs, cornstarch, sugar and vinegar. Cook over medium heat until mixture is thick. Pour into a large bowl and stir in cream cheese; mix well. Fold in Cool Whip and fruit; mix well. Add mini marshmallows and refrigerate, covered, for 24 hours before serving. Top with coconut just before serving, if desired.
