GARDEN VEGGIE OMELETTE

Ingredients

1 tsp. butter or margarine
4 eggs
2 Tbsp. water
3 Tbsp. Garden Vegetable Dip & Cheeseball Mix
¼ tsp. salt
Black pepper, to taste
½ red pepper, diced
Cherry tomatoes, halved or quartered
1/3 cup fresh basil, chopped
2 green onions, sliced
¼ cup cheddar cheese, shredded

Instructions

In a 10" non-stick skillet, melt butter over medium heat. In a separate bowl, beat the eggs then add water, Garden Vegetable Dip & Cheeseball Mix salt and pepper. Pour mixture into skillet; add red pepper, tomatoes, basil, green onions and shredded cheese. Cook over medium heat. As eggs set, lift the edges, letting uncooked portion flow underneath. Fold omelette, cover and cook for an additional 1-2 minutes or until cooked through.
