SOUTHWEST TACO SOUP

Ingredients

1 ½ lbs. (.681 kg) ground beef, turkey or chicken
1 onion, diced
1 can (398 mL) pinto beans, rinsed and drained
1 can (540 mL) black beans, rinsed and drained
1 can (796 mL) diced tomatoes
1 can (540 mL) kernel corn, undrained
2 Tbsp. Mango Chili Lime Seasoning (add more to taste)
1 Tbsp. The Perfect Blend Seasoning
4 cups (1 L) beef broth (or use water/bouillon)

Instructions

In a large soup pot, brown ground meat (beef, turkey or chicken); drain grease. Add onion and cook until soft. Add remaining ingredients, bring to a boil; reduce heat and simmer for 30-45 minutes.

To use a slow cooker: Brown ground meat in a fry pan, drain grease. Add onion and cook until soft. Transfer to a large slow cooker and add remaining ingredients. Cook on low for 6-8 hours or on high for 3-4 hours.

Serving Suggestions: Top soup with sour cream, shredded cheese, and/or crushed tortilla chips.
