STUFFED PORK TENDERLOIN

Ingredients

2 cups bread, cubed
1 tsp. The Perfect Blend Seasoning
2 tsp. Oh! So Garlic
1 Tbsp. Oh! So Celery
3 Tbsp. butter
1 small onion, diced2 apples, peeled & chopped
½ cup dried cranberries
2 pork tenderloins
Salt & pepper
1 Tbsp. olive oil
1 tsp. Sunset Seasoned Salt

Maple Apricot Bourbon Sauce:
1/3 cup apricot jam
¼ cup Maple Bourbon Apricot Glaze

Combine the jam with the glaze, heat and serve warm.

Instructions

Pre-heat oven to 350°F. Place cubed bread and the first 3 seasonings in a large bowl. Over medium heat, melt 1 tablespoon butter in a sauté pan. Add diced onion and cook until translucent. Add cooked onion to the bowl with bread and seasonings, along with apples and dried cranberries. Butterfly the pork and season with salt and pepper. Spread the stuffing all across the pork loin. Roll up the pork tenderloin and secure tightly with cooking twine. Heat olive oil and remaining butter in a large skillet. Season the tenderloin with Sunset Seasoned Salt and sear on all sides. Place in a roasting pan and bake uncovered until internal temperature reaches 145°F, about 40-45 minutes; basting with pan juices. Let rest for 10 minutes before slicing. Serve with sauce.
