TROPICAL PARADISE GREEK YOGURT FRUIT TART

Ingredients

15 pitted Medjool dates (about 230 g), soaked in warm water for 10 minutes
¾ cup unsalted cashews
¾ cup unsalted almonds
1 cup plain Greek yogurt
3 Tbsp. Tropical Paradise Dip & Dessert Mix
Assorted fresh fruit, sliced
Optional (for topping): 2 Tbsp. Apricot & Maple Sweet Pepper Jelly

Instructions

Spray the bottom of a 9" pan (tart pan, cake pan or pie dish) with non-stick cooking spray. Line with parchment paper (cut a parchment paper circle slightly larger than the pan). Soak the dates in warm water for 10 minutes; drain, then cut in half before using. In a food processor or blender, pulse the dates, cashews, and almonds together until a thick “dough” is formed and the nuts are all broken up. The dough will be sticky. Press evenly into prepared pan and partly up the sides. Combine Greek yogurt with Tropical Paradise Dip & Dessert Mix and spread on top of the crust. Decorate with fresh fruit. Optional topping: mix together Apricot & Maple Sweet Pepper Jelly with 1 tablespoon water, and brush over fruit for a glossy finish. Slice and serve immediately or cover and refrigerate for up to 1 day before serving.
