BAKED ZUCCHINI FRIES

Ingredients

½ cup sour cream
1 tsp. Applewood Chipotle Rub & Seasoning (Retired)
½ cup skim milk
1 egg
½ cup plain dried bread crumbs
½ cup shredded Parmesan cheese
1 tsp. Sunset Seasoned Salt
2 large zucchini

Instructions

Blend sour cream with Applewood Chipotle Rub & Seasoning (Retired); refrigerate until ready to serve.

Preheat oven to 425 F. Grease a baking sheet; set aside. In a medium bowl, whisk milk and egg together. Blend the bread crumbs, cheese and Sunset Seasoned Salt in a pan. Coat the zucchini wedges with the milk-egg mixture, then gently roll them in the bread crumb mixture. Place the coated zucchini onto the prepared baking sheet. Bake 20-25 minutes, or until crispy and golden brown. Serve with Applewood Chipotle Dip.
