CHICKEN PARMIGIANA BITES

Ingredients

4 boneless, skinless chicken breasts, cut into bite sized pieces
¼ cup olive oil, plus additional for frying
½ cup mozzarella cheese, shredded
1 packet Chicken Parmesan Sheet Pan Seasoning
½ cup marinara sauce

Instructions

Preheat oven to 425°F. In a resealable bag, combine Chicken Parmesan Sheet Pan Seasoning, 1/4 cup oil and chicken breasts. Close bag securely and squeeze bag to thoroughly coat the meat. Heat olive oil over medium-high heat. Add chicken and cook until golden, and cooked through, about 5-7 minutes. Drain on a paper towel-lined plate. Arrange chicken in a baking dish in a single layer. Add a small spoonful of marinara sauce over each piece of chicken and top with some mozzarella. Bake until cheese is melty. Serve as an appetizer with a toothpick inserted into each piece for easy pick up.
