FARMSTAND VEGETABLE PORK TENDERLOIN

Ingredients

1 pork tenderloin
1/3 cup oil
1 packet Farmstand Vegetable Sheet Pan Seasoning
4 cups assorted fresh vegetables, cut into 1" chunks
(carrots, Brussels sprouts, onions, etc...)

Instructions

In a resealable bag, combine seasoning and oil. Add pork tenderloin and
close bag securely. Carefully squeeze bag to thoroughly coat the pork
with seasoning. Marinate for 30 minutes in the refrigerator. Do not discard
marinade, will use later for vegetables. When ready to bake: Preheat oven
to 400°F. Lightly spray a sheet pan with non-stick cooking spray for easy
clean-up (you can also line the sheet pan with parchment paper or non-stick
foil). Place marinated pork onto sheet pan. Place vegetables in the resealable
bag containing remaining marinade. Close bag securely and toss until
vegetables are thoroughly coated with marinade. Arrange vegetables
around pork and bake for 30- 40
minutes or until pork is cooked
to 155°F. Allow the meat to rest
for 3-5 minutes before cutting,
to allow the temperature
to rise to 160°F.
