KANSAS CITY PORK TENDERLOIN

Ingredients

1 pork tenderloin
4 cups assorted fresh vegetables, cut into 1" chunks (mini potatoes, red pepper, carrots, Brussels sprouts, etc...)
1 packet Kansas City Rub Sheet Pan Seasoning
1/3 cup oil

Instructions

Remove silver skin and bits of tendon from pork tenderloin. Place in a resealable bag along with the oil and Kansas City Rub Sheet Pan Seasoning. Close bag securely and squeeze bag to thoroughly coat the meat. Marinate for 30 minutes in the refrigerator. Do not discard marinade, you will use later for vegetables. When ready to bake, preheat oven to 400°F. Lightly spray a sheet pan with non-stick cooking spray for easy clean-up (you can also line the sheet pan with parchment paper or non-stick foil). Place marinated pork in centre of sheet pan. Place vegetables in the resealable bag containing remaining marinade. Close bag securely and toss until vegetables are thoroughly coated with marinade. Arrange vegetables around pork and bake for 30- 40 minutes or until pork is cooked to 155°F. Allow the meat to rest for 3-5 minutes before cutting, to allow the temperature to rise to 160°F.
