SUNDRIED TOMATO & GARLIC ZUCCHINI BOATS

Ingredients

Sundried Tomato & Garlic Olive Oil (Retired)
2 zucchini (7-8" long)
Salt & pepper
1 Roma tomato, halved, then sliced
1/4 cup small fresh basil leaves
1/2 cup shredded mozzarella cheese

Instructions

Preheat oven to 350°F. Slice zucchini in half lengthwise. Drizzle zucchini with
Sundried Tomato & Garlic Olive Oil (Retired) then season with salt and pepper, to
taste. Place zucchini cut-side up in a baking dish and bake for 20 minutes.
(To help zucchini sit flat in dish, take a small slice off the under side.)
Remove from oven and top with tomatoes, cheese and fresh basil, then bake
for another 5 minutes, until cheese is melted. Turn the oven to broil for an
additional 3-5 minutes to
brown the cheese.
