CHICKEN KABOBS WITH PINEAPPLE

Ingredients

1 green bell pepper, cut into 1 1/2" pieces
1 red bell pepper, cut into 1 1/2" pieces
1 small onion, cut into pieces
3 chicken breasts, cut into 1" pieces
½ pineapple, cut into 1" chunks
1 Tbsp. olive oil
2 tsp. Smoky-Sweet Barbeque Rub & Seasoning (Retired)
1/3
cup Sunset Gourmet’s Smoky Sweet Grilling Sauce
Bamboo* or metal skewers

Instructions

Place pepper pieces, onion, pineapple and cubed
chicken in a medium bowl, drizzle with olive oil
and sprinkle with Smoky-Sweet Barbeque Rub &
Seasoning. Mix well and refrigerate for 1-2 hours.
Preheat barbeque. Alternate chicken, peppers,
pineapple and onion on skewers. Grill on medium
heat for 10-15 minutes; turning frequently. Brush
kabobs with Sunset Gourmet’s Smoky Sweet
Grilling Sauce during last five minutes of cooking.
*If using bamboo skewers, soak in water for
20 minutes before using.
