FARMSTAND VEGETABLE CHICKEN SHEET PAN MEAL

Ingredients

1 ½-2 lbs. (.680-.907 kg) boneless, skinless chicken breasts or thighs
1/3 cup oil
1 packet Farmstand Vegetable Sheet Pan Seasoning
4 cups assorted fresh vegetables, cut into 1" chunks (carrots, onions, broccoli, peppers, small potato, etc...)

Instructions

In a resealable bag, combine Farmstand Vegetable Sheet Pan Seasoning, oil and chicken. Close bag securely and squeeze bag to thoroughly coat the meat. Marinate for 30 minutes in the refrigerator. Do not discard marinade, will use later for vegetables. When ready to bake: Preheat oven to 400°F. Lightly spray a sheet pan with non-stick cooking spray for easy clean-up (you can also line the sheet pan with parchment paper or non-stick foil). Spread marinated meat onto sheet pan. Place vegetables in the resealable bag containing remaining marinade. Close bag securely and toss until vegetables are thoroughly coated with marinade. Arrange vegetables around chicken and bake for 30-40 minutes or until chicken is cooked through.
