RASPBERRY PEACH CHIPOTLE AND BERRY SALAD

Ingredients

1 head leaf lettuce, washed and excess water spun or shaken off
4 boneless, skinless chicken breasts
2 tsp. Kickin’ Chicken Rub & Seasoning
2 cups fresh berries of your choosing, cut larger berries
(raspberries, blackberries, blueberries, strawberries, etc...)
3/4 cup Creamy Vidalia Onion & Poppy Seed Dressing
3/4 cup Raspberry Peach Chipotle Sauce (Retired), divided

Instructions

Heat BBQ to medium heat. Season chicken breast with Kickin’ Chicken
Rub & Seasoning and grill for 20 minutes or until cooked through. In the last
few minutes of cooking, brush with 1/4 cup Raspberry Peach Chipotle Sauce (Retired);
set aside to rest for 5-10 minutes, then slice. Meanwhile, tear leaf lettuce into
bite-sized pieces and place on four
dinner plates. Top with fresh berries
and sliced chicken breasts. Combine
Creamy Vidalia Onion & Poppy
Seed Dressing and 1/2 cup Raspberry
Peach Chipotle Sauce together, then
drizzle evenly over the 4 salads.
