PUMPKIN & RAISIN BREAD PUDDING

Ingredients

You will need one package of our Pumpkin Spice Quick Bread Mix (Retired), prepared and baked.
2 cups milk
¼ cup butter
2 eggs, slightly beaten
½ cup sugar
1 tsp. cinnamon
½ cup raisins, rinsed
6 slices (¾" thick) Pumpkin Spice Quick Bread, cubed

Instructions

Heat oven to 350°F. In a medium saucepan, heat milk and butter over medium heat until butter is melted and milk is hot. In a large bowl, mix eggs, sugar and cinnamon. Stir in Pumpkin Bread cubes and raisins. Stir in milk mixture. Pour into a 9" buttered casserole dish. Bake uncovered 40 to 45 minutes or until knife inserted 1" from edge comes out clean. Serve warm with caramel sauce.

Caramel Sauce
• 2 1/4 cups brown sugar, packed
• 1 cup unsalted butter
• 1 1/2 cups whipping cream
Whisk brown sugar and butter in a heavy, medium sized saucepan over medium heat until butter melts. Whisk in cream and stir until sugar dissolves and sauce is smooth, about 3 minutes.
