APPLEWOOD CHIPOTLE ROASTED SHRIMP

Ingredients

1 lb. medium-sized (16-20 count) shrimp, peeled and deveined, tails on
1-2 Tbsp. olive oil
Applewood Chipotle Rub & Seasoning (Retired)
1/2 lime (optional)

Instructions

If frozen, thaw the shrimp. (Here is a quick thaw method: place the shrimp in a colander in the sink and run cold water over them for about 5 minutes. Toss them occasionally to make sure they are all exposed to the cold water.)

Heat the oven to 400°F with a rack placed in the middle of the oven. Pat shrimp dry with a paper towel and place in a bowl. Lightly drizzle the shrimp with olive oil and toss to coat. Spread shrimp in a single layer on a parchment lined baking sheet. Sprinkle with Applewood Chipotle Rub & Seasoning (Retired). Flip the shrimp and lightly sprinkle the other side. Bake for 6 to 8 minutes until the shrimp turns from grey and translucent to pink and opaque. Remove from oven, squeeze fresh lime juice over top (if desired) and eat immediately.
