BUTTERY CHICKEN WITH FRESH GARDEN VEGETABLES

Ingredients

4 boneless, skinless chicken breasts
1/2 cup butter, melted
1 1/2-2 cups seasoned dry breadcrumbs
1 Tbsp. Onion, Garlic & Herb Seasoning
1 tsp. Sunset Seasoned Salt
1 tsp. Sunset Seasoned Pepper
1 lemon

Instructions

Preheat oven to 375°F. Place chicken breasts on a cutting board and cover with plastic. With a meat mallet or a heavy pan pound the chicken to an equal thickness of about ½". Place melted butter in a shallow bowl. Place breadcrumbs and seasonings in a separate shallow bowl. Dip chicken pieces in butter mixture and then into crumbs, coating completely. Place chicken on a greased baking sheet; drizzle with remaining butter mixture. Bake at 375° for 25-30 minutes or until chicken is no longer pink in the middle. Top with a squeeze of fresh lemon, if so desired. Serve with fresh garden vegetables.
