CREAMY CHICKEN & MUSHROOMS

Ingredients

4 small boneless chicken breasts, cut in half length-wise
2 Tbsp. olive oil
2 Tbsp. butter, divided
1 tsp. salt and pepper
1 Tbsp. Onion, Garlic & Herb Seasoning
1/2 cup flour
10 -12 sliced mushrooms
2 Tbsp. soy sauce
½ cup cream or milk
1 can (284 mL) cream of mushroom soup
Lemon wedge

Instructions

Add seasonings to flour. Dredge chicken in flour mixture. In a large skillet heat olive oil and 1 Tbsp. butter over medium-high heat; add chicken to skillet and sauté for 8-10 minutes; remove chicken. In the same pan add 1 tablespoon butter and sliced mushrooms; add soy sauce. Sauté for five minutes. Add mushroom soup, cream and squeeze of lemon. Simmer and add chicken. Simmer on low for 15 minutes. Serve with grilled vegetables and sweet potato wedges.
