FARMSTAND VEGETABLE SALMON SHEET PAN MEAL

Ingredients

1 ½-2 lbs. (.680-.907 kg) salmon fillets
1/3 cup oil
1 packet Farmstand Vegetable Sheet Pan Seasoning
4 cups assorted fresh vegetables, cut into 1" chunks
(onions, zucchini, cherry tomatoes, peppers, etc...)

Instructions

In a resealable bag, combine seasoning and oil. Add salmon and close bag
securely. Carefully squeeze bag to thoroughly coat the salmon with seasoning.
Marinate for 30 minutes in the refrigerator. Do not discard marinade, will use
later for vegetables. When ready to bake: Preheat oven to 400°F. Lightly spray
a sheet pan with non-stick cooking spray for easy clean-up (you can also line
the sheet pan with parchment paper or non-stick foil). Place marinated salmon
onto sheet pan. Place vegetables in the resealable bag containing remaining
marinade. Close bag securely and toss until vegetables are thoroughly coated
with marinade. Arrange vegetables
around salmon and bake for
22-30 minutes or until salmon
is cooked through
