POTATO & LEEK SOUP

Ingredients

1 Tbsp. oil
3 Tbsp. Oh! So Celery
2 celery ribs, chopped
1/2 lb. (8 oz.) ham, diced
4 red potatoes, cut into 1" cubes
4 cups chicken broth
2 cups water
Salt & pepper, to taste
½ cup evaporated milk
2 Tbsp. cornstarch
1 Tbsp. water
1 Tbsp. fresh parsley, chopped

Instructions

In a large pot, cook together 1 tablespoon oil, Oh! So Celery and celery over medium heat until celery begins to soften, about 5 minutes. Add ham, potatoes, chicken broth, 2 cups water, salt & pepper to taste, cook over medium heat until potatoes are tender. Reduce heat to medium-low and stir in evaporated milk. In a small bowl, mix together the cornstarch and 1 tablespoon water until combined, stir into soup and heat until the soup thickens. Stir in chopped parsley and serve.
